HRA Global’s MD Hamish Renton spoke to The Grocer about why we should be careful to develop new recipes which are more correct in their authentic taste because Brits are not yet ready for the ‘full punch of flavour some cuisines deliver’. “Choosing a dish that is completely polarising is a road that leads you on sales for 12 weeks and then you are out”, he says. “So dishes should make a nod to authenticity, and perhaps have one or two signature ingredients, but ultimately they should be adapted for the British palate.”
